Light and Easy Lemon Garlic Butter Shrimp!

 How about a delicious and quick Lemon Garlic Butter Shrimp with Asparagus? It's light, flavorful, and perfect for a summer evening. Here's how you can make it:

Lemon Garlic Butter Shrimp with Asparagus

Ingredients:

  • 1 pound shrimp, peeled and deveined

  • 1 bunch asparagus, trimmed

  • 4 cloves garlic, minced

  • 1 lemon (zest and juice)

  • 3 tablespoons butter

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Olive oil

Instructions:

  1. Prepare Asparagus:

    • Heat a large skillet over medium-high heat and add a drizzle of olive oil.

    • Add asparagus spears to the skillet and season with salt and pepper. Cook for about 5-7 minutes, or until asparagus is tender-crisp. Remove from skillet and set aside.

  2. Cook Shrimp:

    • In the same skillet, add another drizzle of olive oil if needed.

    • Add minced garlic and sauté for about 1 minute until fragrant.

    • Add shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until pink and cooked through.

  3. Combine:

    • Reduce heat to low and add butter to the skillet. Let it melt and coat the shrimp.

    • Add lemon zest and lemon juice to the skillet, stirring to combine everything evenly.

  4. Serve:

    • Return the asparagus to the skillet, gently tossing to coat with the lemon garlic butter sauce.

    • Season with additional salt and pepper if needed.

    • Garnish with fresh chopped parsley.

  5. Enjoy!

    • Serve the Lemon Garlic Butter Shrimp with Asparagus immediately while warm. It pairs well with crusty bread or over rice.
